Cucumber, Tomato, and Avocado Salad

A perfect, simple salad for any occasion.

  • 1 cucumber (chopped)
  • 1 container grape tomatoes (cut in half)
  • 1 avocado (diced)
  • 1/2 sweet onion (chopped)
  • 2 TBSP fresh basil (chopped)
  • 1/4 cup feta cheese (crumbled)
  • 1 clove garlic (finely chopped)
  • 3 TBSP extra virgin olive oil
  • 2 TBSP red wine vinegar
  • 1/2 tsp oregano
  • 1/2 tsp sea salt
  1. Add cucumber, tomato, avocado, onion, feta cheese, and basil to a large bowl.

  2. Add remaining ingredients to a small and mix well.

  3. Pour the dressing over the vegetable mix and stir through well.

  4. Store any leftovers in the refrigerator in an air-tight container.
